Jackfruit is not a fruit that is my favorite. I somehow don’t seem to like it. It wasn’t like that all the time. There was a time I used to hog on jackfruit. My mattamma – umma’s mom – has a few huge jackfruit trees in her yard that yeilds so many fruits every year, MaShaAllah. However, off late, it hasn’t been able to, maybe due to its old age or likely even bad eye. Hehe… When we were in school, our home visits were limited to once in two years. I always wonder what it felt like being home without doing much, and I can hardly remember anything. Nowadays, kids are actually pampered with visits every now and then. I have been trying to see if we can defer plans every year, but there would be something or the other, and we would have to go. This year too, I have booked the tickets, but we have to wait and see how everything will pan out closer to that time.

 

So whenever we were going home, mattamma would have reserved her best jackfruits for us to eat. July is the month where it is usually done with and the jackfruits on the trees would be tasting more of water than anything else. Still, she would store them. When she would cut through them, I would sit on a “palaka” (a flat stool, on which you have to squat and sit) just close to her, and as she would put in the individual jackfruit slices into the bowl next to her, I would eat out of it. Who would have count of it when you eat that way? Umma would always warn that I would get an upset tummy if I eat without control. And her words got jinxed. I got such a nasty diarrhea that it is still stuck in my mind despite all these years. I will cut and give to all, but I still can’t myself to eat this fruit, the aroma of which lingers and tempts so much. 🙁

 



 

Last year, I had posted an ice cream from this fruit. Now this year, if you are wondering how I landed up with a jackfruit, HD had gone home for a week to get his eyes tested. Now that’s a long story, that I will reserve for some other post. Despite my protests, he went ahead and traveled during a time with the Covid19 fears had just started rocking this place. He went, got his eyes tested, did a small surgery, rested the 5 days he was asked to, got it checked again and came back just in time before all flights were grounded. It’s been more than two weeks now and Alhamdulillah, we are all fine. Since my brother and I still go to work on and off, we are taking all measures we can to keep ourselves hygienic and not go to anyone in the house till we are done with our cleansing. I sincerely don’t want to talk too much about it…

 

OK, so the jackfruit he got was huge and wasn’t ripe. We tried cutting into half and left it out. It ripened in a week’s time. HD took one half and gave it off to his staff and the other half was cleaned by my sister-in-law – God bless her. She did something that I am not really fond of! Hehe… I saved up a few slices to make this delicious cake that I have been wanting to do since long. It is a normal butter cake but with jackfruit puree included in it. I microwaved the jackfruit till soft and then ground it to puree. You can pressure cook instead. It was such a super moist and aromatic cake. We finished more than half the cake without even waiting for it to cool down. In fact, we all felt that the cake tasted so much better when fresh out of the oven than otherwise. If you are able to get some jackfruit slices, then I would really suggest you all to try this cake. It is a lovely tug during these tough times… I really guarantee you… Off to the recipe…

 



 

 

Easy Jackfruit Cake   Save Print Prep time 20 mins Cook time 1 hour Total time 1 hour 20 mins   Author: Rafeeda Recipe type: Cakes Cuisine: Indian Serves: 6-8 Ingredients 1 packed cup seedless jack-fruit ¼ cup water 115 gm butter, softened ½ cup brown sugar 2 large eggs, room temperature ½ tsp cardamom powder 1½ cup all purpose flour 1 tsp baking powder ½ tsp baking soda ¼ tsp salt ¼ cup chopped jackfruit 15-20 cashewnuts, roughly chopped Instructions Put the jackfruit and water into a microwave dish. Microwave on high for 5 minutes. Allow to cool and grind into a smooth paste. Preheat oven to 180 degrees. Grease a loaf pan - I used a disposable one. Beat butter and sugar till soft and fluffy. Beat eggs, one at a time till combined. Add the cardamom and beat. Sift in the flour, baking powder, baking soda and salt into the beaten mixture. Pour the jackfruit pulp and fold in the mixture till all moist. Fold in the chopped jackfruit and cashew nuts. Pour the batter into the prepared pan and bake for 30-40 minutes till skewer comes out clean. Allow to cool in pan for five minutes and then flip onto a cooling rack till completely cooled. 3.5.3251
