So this is a very simple recipe, where you dont actually need to stick to actual proportions, I know that’s a relief. Also something that can be enjoyed from breakfast to dinner alike. Though I give a basic meat loaf recipe but using this as template you can be creative with the flavours and combinations.
So let’s get started,
Things you will need,
- Chicken mince : 250gm
- Chopped onion : 1/2 cup
- Chopped garlic : 4-5 cloves
- Chopped celery ( optional) : 1/4cup
- Chopped bell pepper: 1/4 cup
- Garlic powder: 1 tbsp
- Onion powder: 1tbsp
- Dried oregano
- Dried rosemary
- Redchilli flakes
- Salt
- Pepper
- Egg : 1 large
- Bread crumb : 1/3 cup , some more
- Butter : 2tbsp
How I made it,
- Heat up butter on medium low heat
- Add in chopped onions, garlic and celery together
- Saute till translucent
- Add in chopped bell pepper and add some salt
- Saute for 5 more minutes
- By this time in large bowl add rest of the ingredients except egg and bread crumb
- Add in the veggie mix and butter
- Mix well
- Break in an egg and add bread crumbs and mix thoroughly so that it resembles a wet bread dough
- Grease a loaf tin
- Line with parchment
- Pour in the chicken mix
- Bake in a preheated oven at 190-200°c with fan for above 25-30 mins In middle rack
- Take out and let it cool down a bit, and demould , slice up and it’s ready to be enjoyed
It’s a versatile dish, can be had at breakfast with some poached eggs and veggies, can be made in to a sandwich, can be served with some mash and gravy for meal.
