Gluten free Gingerbread Slice with Pecans and Hazelnuts


This delicious Gluten Free Ginger Slice with Pecans and Hazelnuts went down an absolute treat with friends over the weekend. Its definitely one of the easiest baked goodies for the Chrissy season, yet still so festive in flavour with ginger spice, pecans and hazelnuts. I made it gluten free using the Woolworths Free From Gluten Self Raising Flour only available at @woolworths_au and it was still lovely and fluffy. If ginger isnt your flavour, you could swap out for some cinnamon and it would be just as scrumptious.

GLUTEN FREE GINGER BREAD SLICE WITH PECANS AND HAZELNUTS

Serves 10-12

Gluten free : Dairy Free (optional)

1/2 cup (125ml) extra virgin olive oil

2 free range eggs

1/2 cup maple syrup

2 teaspoons vanilla extract

1 tablespoon ground ginger

1/2 teaspoon mixed spice

1/3 cup milk (dairy or plant based)

1 1/2 cups (240g) Free From Gluten Self Raising Flour

1/4 cup pecans, roughly chopped

1/4 cup roasted hazelnuts, roughly chopped

Heat oven to 160C and line a rectangular xx cm baking dish with greaseproof paper. Whisk together oil, eggs, maple, vanilla, ginger, mixed spice and milk until creamy. Add Free From Gluten Self Raising Flour and mix. Pour into lined baking tin and cook for 35 minutes, or until skewer inserted into the middle comes out clean. Cool in dish for 20 minutes, then transfer to rack and cool completely before slicing and serving.
