Shrimp With Edamame and Fried Rice


A simple, healthy, and easy recipe that you can make in 19 minutes using the Foodie Pressure Cooker. Made with shrimp, edamame, and fried rice. Who doesn’t love a good recipe of shrimp with fried rice?

I found this recipe in the NINJA Foodie recipe book that came with my pressure cooker.

Testing the Recipe

For the test, I base it off of four factors:

  • Ingredients
  • Taste
  • Quality
  • Cooking Level

The ingredients were frozen as it called for in the recipe, I used frozen mixed vegetables and frozen but cooked shrimp. The rest of the ingredients were natural or a sauce we had. The taste was good, but I preferred more soy sauce than the recipe asked for. The shrimp in my opinion came out overcooked,so I would probably saute and cook the shrimp on the stove instead. The quality was good and I was completely surprised that the pressure cooker cooked the rice. This is a beginner recipe and if you would like me to try this recipe without the pressure cooker, let me know!

Final Thoughts

Overall, I liked the simplicity in this recipe using the pressure cooker and it was very easy to convert to gluten-free. I would like to try this one day with adding egg and cooking it without the pressure cooker to see if the taste would still be the same. For the leftover edamame, I put it on the side with some sea salt on top. It tastes good and it is a healthy snack that I always love to eat.

Shrimp with Edamame and Fried Rice

Total Cook Time: 19 minutes

Makes: 4 Servings

Ingredients:

  • Level 1 (BOTTOM OF THE POT)
  • 1 1/2 cups of water
  • 1 tablespoon of gluten-free soy sauce or amino acids
  • 1 cup of white rice, rinsed (until water runs clear)
  • 1 cup frozen vegetable meadley
  • Level 2 (BOTTOM LAYER OF THE RACK)
  • 1 bag (12 ounces) frozen edamame in the pods
  • Level 3 (TOP LAYER OF THE RACK)
  • 1 box (10 ounces) frozen shrimp

Instructions:

  1. Place all Level 1 ingredients in the pot and stir until fully combined.
  2. Place the bottom layer of the Deluxe Reversible Rack in the lower position, then cover it with aluminum foil. Place the rack in the pot. Place the edamame on top of the foil.
  3. Slide the Deluxe Layer through the lower layer’s handles. Place the frozen shrimp on the Deluxe Layer of the rack. Close the lid and move the slider to STEAMCRISP.
  4. Select STEAM & CRISP, set the temperature to 450 degrees Fahrenheit, and set the time to 7 minutes. Press START/STOP to begin cooking (PrE will display for approx. 12 minutes as the unit steams, then the timer will start counting down).
  5. When cooking is complete, remove the rack layer with the shrimp, then the rack layer with the edamame.
  6. Transfer the rice to a serving dish and serve with edamame and shrimp.
