Simple things done well can become great things. This French toast is no exception. It is a dish that comes together quickly, has relatively few ingredients, and does not require expertise to make. Some vegan dishes that seek to replicate animal based foods1. This recipe stands on it own by delivering a delish breakfast staple.
Mileage may vary with the mixture. This is due to bread thickness and banana size. Adjust the mixture with more or less almond milk as needed. How long to soak the bread will depend personal preference. Longer soak times will give more of a custardy finish to the French toast.
INGREDIENTS
- 1 Banana
- 1/3 Cup Soy Milk2
- 1 Tablespoon Maple Syrup
- 2 Tablespoons Ground Cinnamon
- 2 Teaspoons Nutritional Yeast
- 1 Teaspoon Vanilla Extract
- 1/2 Teaspoon Kosher Salt
- 1 Tablespoon Vegan Butter3
- 6 Slices Stale Bread

Preparation
- Allow the bread slices to sit overnight if not already stale. Dryer slices will absorb more of the custard-like mixture. If time does not allow for an overnight staling, place the slices on a wire rack in a rimmed baking sheet in a low oven until dried.
- Turn the oven on to the lowest (or a warming) setting. This will be used to keep the toasts warm while others are being cooked. Have a wire rack in a rimmed baking sheet ready for use.

- Preheat a skillet over medium heat.
- Unpeel the banana then add to a mixing bowl.
- Pour in the almond milk then add the maple syrup, cinnamon, nutritional yeast, vanilla extract, and salt.
- Mash the mixture with a fork and then switch to a whisk if necessary until the mixture is thoroughly combined.
- Add some of the vegan butter to the skillet.
- Place the bread into the mixture for 10 seconds4 before flipping and allowing to soak up the mixture for another 10 seconds.
- Lay the soaked bread slice into the skillet and cook for 2 to 3 minutes before flipping.
- Reserve cooked slices in a low oven until ready to serve.
- Top with powdered sugar, banana slices, vegan butter, and/or maple syrup.

ANNOTATIONS
- Most non-vegan recipes are meat substitutes. Eggs, milk, etc. are often overlooked in my experience. This is not trying to be like eggs. And to my benefit! I’m not overly fond of the egg flavors in traditional French toast.
- Soy milk, cashew milk, or other milk substitutes can be used too. I won’t be checking what you decide to include.
- Neutral flavored oil could be a nice option as well. Avoid motor oil, however, when making French toast.
- This depends how soggy or crispy the French toast should be. Try a few slices at different soak times to see how it turns out!
