What I’ve Cooked Lately







It’s so easy to fall into a rut of the same things over and over, and frankly I’ve been eating baked spaghetti in that rut for quite some time now. Nothing shakes me out of a routine like a fresh menu and new challenges to attempt, as well as wondering how something will turn out. I’ve been on a great streak these last two weeks, and wanted to round up a few of my favorites!

Grilled Corn Salad (Smitten Kitchen) This has the word salad in it, so you’re welcome. This has been a smash hit every time I’ve had it and made it myself. Even better? Trader Joe’s sells grilled corn so you can take the time-intensive part out of it, should you choose. I also subbed in Greek Yogurt the last time I made it, and it turned out just fine.

Lemon Garlic Parmesan Wings (Sweet C’s Designs): I’m not a super Lemon person. I’m not even a super bone-in wing person. But my GOSH I’m a lemon garlic parmesan wing person. These are unreal, and super easy! I lined a baking sheet with parchment paper and put a wire rack on top. I placed the wings on the rack and let them bake first, then tossed them in the sauce. We also had cauliflower rice (barf) but put this sauce on top of it and it made life worth living again. Sauce would be great on another chicken dish, beef, pork and through a straw.

Butterscotch Pudding Pie with Saltine CRUST (Our State Magazine) Sorry I got a little excited with the caps. But. this. crust. was. everything. The whole PIE was EVERYTHING. Including every dish in my house and every ounce of my patience. But boy was it worth it. I over-blended my saltines and they turned into a powder, so do less of that. Also, I made the crust the night before which saved some time the day of! Just cover it tightly and you should be all set. Don’t rush this one! And DON’T leave off the Heath Bar.

Spinach and Artichoke Casserole (Huckleberry Collective): This one was awesome and we had leftovers for days! It felt on the healthy side (though with the cheese it may have all been a figment of my imagination). It was also plain and crowd-pleasing enough that I think it would be great for new moms and neighbors!

If you’re in need of an easy salad to accompany any of these dishes, we can’t stop eating this Sunflower Bacon Crunch chopped salad from Walmart! The dressing is to DIE for. I usually leave off the seeds and sub in fresh bacon, but otherwise it’s perfect right out of the bag!
