Ingredients:

  • 2 lbs. pork belly
  • 1 tbsp sesame oil
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp gochujang
  • 2 tbsp soy sauce
  • 6 cloves of pressed garlic
  • 1 tsp five spice powder
  • 1 tsp seasoned salt
  • 1 tsp onion powder

Directions:

First thing is to prepare the Xa Xiu marinade for your pork belly. Start by combining all the sauces and spices into a small bowl and proceed to mix well to have it nicely integrated.

Slice your pork belly into 6-inch pieces and set them in a tray that will fit them all. Take a fork and poke holes all throughout the pork belly slices. This will ensure the flavor properly penetrates all parts of the pork belly. It is a thicker cut, so getting the flavor to sit well inside it can be a challenge.

It is now time for the marinading process. Begin by pouring the mixture on one side and massaging it well into the pork belly. Flip it over and continue to massage it well into the other side. For best flavors, let this marinade over night, you will not regret it. If you are pressed for time, at least 30 minutes will help with the flavoring.

Proceed to preheat your oven to 400 degrees Fahrenheit. Line a baking tray with a baking sheet to catch all the juices and place a cooling rack or elevated rack over the tray. By lifting up the pork, this will allow proper airflow to go around it and cook it evenly.

Place the pork belly once they finish marinading onto the racks and then set inside the oven. Cook the pork belly for 20 minutes on the first side and then flip and continue to bake for 10-15 minutes on the second side. Be sure to keep checking on it to ensure that it does not burn. You can poke the pork belly with a fork and if the juices run clear, it should be ready to consume.

Serve immediately with rice or lettuce with your choice dipping sauce.

Fun Fact: Red is the color of luck and fortune. This dish is typically prepared with a reddish hue to it and there are some pre-made mixes that can be found at Asian grocery stores that will give it this reddish hue.

The Lesson: The pork belly can be sensitive to burning if left in the oven for too long, so definitely be mindful on checking its doneness in intervals once you flip it over.

Side Note: It is fun to experiment with the marinade and a soy forward flavor is really all you need. The five spice takes it to another level, but you can always substitute with some of your other favorite seasoned spices to make it delicious.
