This dessert is everything a pudding should be – sticky, fluffy and with a sauce you can’t get enough of.



Ingredients
Sticky Date Pudding 1 Cup Chopped Dates 1 Tsp. Bicarb Soda 1 Cup Boiling Water 3.2 oz. (90g) Butter ½ Cup Packed Brown Sugar 2 Eggs 1 Tsp. Vanilla Essence 1 ½ Cups Flour 2 Tsp. Baking Powder ½ Cup Chopped Walnuts or Pecans Caramel Sauce 10 Fl. Oz. (300ml) Thickened Cream 1 Cup Packed Brown Sugar ¼ Tsp. Nutmeg 3.2 oz. (90g) Butter 2 Drops Vanilla Essence
Instructions
First place the dates and soda in a bowl then add the boiling water. Stir well then leave to cool for 10 minutes. Next cream the butter and brown sugar together until light and fluffy. Add the eggs one at a time beating well after each one then beat in the vanilla. Sift the flour and baking powder together. Fold half the flour and date mixture into the wet ingredients until just combined then fold in the remaining flour and dates. Gently mix in the nuts. Pour into a greased 8 inch (20cm) square or round cake tin or ovenproof dish. Bake in a preheated oven 350ºF (180ºC) for 35 to 40 minutes or until a skewer inserted into the middle comes out clean. Cool in the tin on a wire rack. To make the caramel sauce; combine the cream, sugar, butter, vanilla and nutmeg in a saucepan then heat over low heat while stirring until the sugar has dissolved and the butter has melted. Simmer gently while stirring occasionally until the sauce thickens slightly. Serve warm over the pudding.
Notes



The flour and baking powder can be replaced with 1 ½ cups of self-rising flour.

For more spice in the pudding add ½ teaspoon of ground cinnamon.

Storing and Reheating Sticky Date Pudding with Caramel Sauce How do you store sticky date pudding?
Leave the sticky date pudding in the baking tin or dish then cover with either a lid, foil or plastic wrap. In cooler weather it can be left in a cool place out of direct sunlight. In warmer weather it should be stored in the fridge. Keep the caramel sauce in the fridge regardless of the weather.
How long does sticky date pudding keep for?
Sticky date pudding will keep for 3 to 5 days. It will become dry over time or may grow mould in humid environments. Discard if you see signs of mould or it has an off smell.
How do you warm up sticky date pudding?
Place a serving portion in a microwave safe bowl then heat for 20 to 30 seconds on high until just warm. Spoon the caramel sauce over the top then heat for a further 10 seconds on high.
Gluten and Dairy Free Options
To make this pudding gluten free; replace the flour with a measure for measure gluten free flour blend and use gluten free baking powder. Check the thickened cream for gluten otherwise use a double cream.

Saving Money Dates
Dried dates have a long storage life of up to 6 months after opening when kept in an airtight container in a cool, dark and dry place. They will last up to a year in the fridge and up to 3 years when frozen. By buying dates in bulk when you see them on special you can save a great deal of money.

Flour and Sugar
Money can be saved on pantry basics such as flour and brown sugar by buying in bulk packs. It is important to store both in airtight containers to prevent pests and moisture. This will also extend their shelf life.

You may find better quality flour at a cheaper price by buying direct from the local flour mill or wholesalers who sell direct to the public.
